Sandro Mosele is one of Victoria's most eminent winemakers, a maestro of Mornington and craftsman behind the success of the highly prestigious Kooyong and Port Phillip estates. Originally planted in 1997, the Yal Yal property has been trained since establishment to yield limited harvests of the finest fruit. Yabby Lake begin with a commitment to listen to the land. To grow only the right varieties, the right clones on the perfect sites, row by row, vine by vine. Hand picked grapes and a measure of whole bunches from a single estate vineyard at Teurong are sent to traditional open top fermenters for a fortnight of vinification. Batches are pressed into 500Litres French oak puncheons for malolactic and a year of age. A perfumed, spicy style, concentrated yet silky over a length of structured tannins, bright fruit characters throughout, wonderful elegance and depth of flavour.

Tod Dexter has made a very special wine out of a small planting of superb Shiraz. In 1997 when the Yabby Lake Vineyard was acquired, it was identified that there was a thin strip of soil through the middle of the property which was unsuitable for Burgundian varietals. It was decided that the two small blocks in the section would be best planted to Shiraz, a bold move in 1997 for the Pinot Noir and Chardonnay obsessed Mornington Peninsula. Two ancient Australian clones were selected, BVRC 12 and PT23, both known to be outstanding performers.

It is while grapes are still growing on the vine that great vintages are made, the focus at Yabby Lake is to translate the fruit into a wine without any distortion. The combination of a warm site in a cool region means that Pinot Gris ripens in good order to produce wines of outstanding quality. Crop levels are carefully managed to produce the consumate Pinot Gris. Fruit is all hand picked, whole bunch pressed and wild yeast fermented, followed by a course of age on yeast lees to infuse textural palate richness.

Exclusively Mendoza clone Chardonnay, hand picked off the propitious vines at parcel 1 of the illustrious Block 6 at Yabby Lake's Tuerong vineyard on the Mornington Peninsula. Grapes are crushed and pressed along with the complete solids into a selection of seasoned and new, tightly grained 500 litre French oak puncheons, naturally vinified for three weeks through the action of wild indigenous yeasts, followed by eleven months maturation. Tucks Ridge continue to produce the style of wines that other estates can only dream about. Chef TV superstar Iain Hewitson came to Tuck's Ridge once for a single episode of his cooking adventures and filmed seven. So what's not to love about Tuck's Ridge? An assemblage of six vineyards around the foothills of Dromana, Red Hill and Merricks North. All are north facing blocks, critical to fruit development.

The three home vineyards on Mornington's Ten Minutes By Tractor estate are all ten minutes by tractor apart. Each parcel within each vineyard is picked and vinified separately, identifying the best performing blocks to construct a most compelling expression of Pinot Noir. The palate is all about immediate, delicious fruit flavours. This isn't to suggest that 10X is a fruit bomb, or somehow simplistic, rather that its complexities are subservient to its drinkability, it's charms are within easy reach, rather than being tucked behind a veneer of seriousness.

Be My Valentine, love Juliet! T'Gallant Juliet Pinot Grigio ensures that lovers everywhere can treat each and every day as if it were Valentine's Day. Winemakers Kevin McCarthy and Kathleen Quealy are specialists at this style of wine, and initially released the Juliet Pinot Grigio to massive acclaim. Aromas of pear, honey and orange, a decadent palate, fruity and savoury notes with a delicious finish.

Mornington brings something different to the Italianate Moscato, climactically it is blessed with a real advantage. In Australia, there are fewer traditional stylistic conventions to the handling of Moscato, therefore flavoursome and refreshing versions can be crafted which trump the Europeans. T'Gallant fashions their Moscato to display the virtues of simple, high quality winemaking, picking the grapes at a moderate alcohol level, gentlly pressing and not messing about with the wine too much, practices which are all central to the T'Gallant philosophy.

Kevin McCarthy and Kathleen Quealy pioneered the development of Pinot Grigio and Pinot Gris wines on the Mornington Peninsula in the late 1980s. Pinot Grigio and Gris are the same grape, how they are grown and handled throughout the vinification determines their caste into the French or Italianate styling. T'Gallant are well versed at both, the maestros of Mornington. Italian have a tendency to pick grapes earlier for a racy, savoury style. The French wait for riper flavours, developing richer palates that are complex, fuller and fatter.

It was the Stonier team who put Mornington on the map for world class Pinot Noir. Several precious Reserve blocks, growing vines up to thirty years of age, are planted to predominantly cooler sites around Merricks and Merricks North. The grapes here are picked slightly later in the season, as the slow ripening blocks achieve limited harvests of the most intensely flavoured fruit. Delicately framed by understated oak, a powerfully fruit driven Pinot Noir offering layers of complexity, true elegance and exquisite richness of flavour.

A Burgundy interpretation of Mornington, the ultimate expression of terroir. Three particular blocks have consistently provided Stonier with low yields of quality fruit, mature hand tended vineyards aged well over twenty years. The vines are predominantly planted to cooler sites around Merricks and Merricks North, harvested slightly later in the season than some of the younger Stonier sites. A rich and engaging style to match with seared Moreton Bay Bugs, deglazed with amandes effilées and sauterne.

One reason Brian Stonier founded his winery and planted vineyards was his love of Champagne. He originally established his now famous Pinot Noir vines to craft a luxury sparkling wine. Stonier Sparkling articulates the cool and maritime growing conditions of the Stonier vineyards at Mornington. Exhibiting heady aromatics, heightened flavour profiles of nuts and baked yeasts, with a fine effervescence, Cuvee Stonier expresses fine masculine fruit, in particular from the major component of Pinot Noir grown to cooler sites.

It is a fact that Stonier introduced Australian Pinot to the world and Australian palates to Pinot. Stonier know their work, assembling some of the most successful of Mornington's regionally distinctive wines. A splendid, forward drinking, fruit filled Pinot Noir with a touch of savouryness that's graced the table alongside many a roasted duck across the length and breadth of the nation. Its bright aroma of juicy red berries and characteristic ruby purple appearance is relied upon to deliver pure Pinot pleasure to paladins everywhere, year in and year out.

A single parcel Pinot Noir from the KBS Vineyard, offering typicity and profound integrity each year. Named after founder Kenneth Brian Stonier, the KBS property was planted in 1988 on deep rich red loams adjacent to the winery. Pinot Noir from this elite site is nothing short of outstanding, it translates into the finest examples of Mornington, consistently well balanced with ripe fruit flavours yet high natural acidity. The smallest quarter of the choicest fruit is separately bottled as KBS Pinot Noir, the balance forming a key component in Stonier's Reserve.

Pinot Noir has been the shining star of Mornington for decades. Red Hill take the pick of crop, assembling a variety of clones from several choice vineyards across the finer precincts of the Peninsula. Red Hill drinks very well at a young age and is best consumed quite soon after release, if you prefer the vibrant cherry, plum and strawberry fruit flavours in their prime. Red Hill also walks on the wilder side of Pinot Noir, treat her to a spell of breathing to develop the funky country game characters and piquant pastoral savouryness.

Harvests of Chardonnay grown to the undulating aspects of Mornington, elevated cooler knolls and warmer northerly sites, are greatly influenced by the invigorating maritime climes of Port Phillip Bay. Red Hill Estate construct a brisk and refreshing style of sub-regional Chardonnay, assembling several clones, selected off vineyards at Red Hill and Main Ridge, Tuerong and Merricks North. Yabby Lake are well positioned to produce the most generously proportioned styles of new world Pinot Noir, vinified to traditional Burgundian techniques. Significant resources have been devoted to developing Yabby Lake's vineyard to the highest possible standard. An assemblage of Pinot Noir clones MV6 and G5V15, clones 114, Pommard and Abel for structure and complexity, the inclusion of a parcel clone 115 imparts layers of elegance, rich fragrant aromas and a long silky palate.

Robert and Mem Kirby planted the first Yabby Lake Vineyard at Red Hill in 1992, following up with extended plantings on the Moorooduc sub region in 1998. Red Claw is the embodiement of collaboration between some of Australia's best winemakers and viticulturalists. The most splendid harvests of Mornington Chardonnay are given a no expenses spared course of French oak ferments and lees battonage, for a rich, textural style which articulates Mornington and proffer a touch of La Bourgogne.

Rahona Valley wines are all produced from a single four acre property within a small valley at Red Hill on the Mornington Peninsula. The growing conditions are excellent, deep, well drained red basalt soils nurture the vines, as the cool maritime climes lead to a long, slow ripening period. Oak barrels impart a very important part of the flavour profile, one of the most significant costs each year. The annual visit of the cooper, a few months before harvest, is one of those pivotal occasions that go a long way to setting the style of wine each and every vintage.
